This chocolate mousse is easy and quick to make to make. A great way to use up ripe avocados. There are many varieties of avos, try to find creamy avos that are not too stringy or watery. The cacao covers up the avocado taste and no-one will tell that it’s make with something green. The optional cayenne pepper makes a spicy Mexican-chocolate version.

1. Pit and scoop out avocado meat. If the avocados are stringy, strain through a coarse strainer.

2. Place the meat in a food processor. Add honey or maple syrup, cacao powder, cacao nibs, sea salt, and optional cayenne pepper. Process until smooth.

3. Serve immediately or save in the refrigerator for up to 3 days.
